The soft fried bows are delicious, soft, and very fluffy sweet Carnival fritters without yeast, that you can prepare in just a few minutes with a few simple ingredients. The most joyful and colorful festival of the year is approaching; besides the traditional and classic chiacchiere or castagnole, you absolutely must try these fragrant and delightful treats that everyone will love, both adults and children. The soft fried bows are mixed with a fork, don’t need to rise, and are very soft, without ricotta, they don’t absorb oil during cooking, and they remain perfectly dry, almost seeming unfried. The hardest part of this recipe will surely be bringing them all to the table 😀

- Cooking methods: Frying
- Cuisine: Italian
- Seasonality: Carnival, All seasons
Ingredients
- 3 1/3 cups all-purpose flour
- 7 tbsp milk
- 1/2 cup sugar
- 2 tbsp butter
- 2 eggs
- 1 packet baking powder
- 1 orange zest
- 1 lemon zest
- 1 pinch salt
- to taste vanilla
- to taste sugar (for coating)
- to taste ground cinnamon
Steps
The soft fried bows are very simple and quick to prepare. First, put the eggs, milk, sugar, softened butter (I warmed it in the microwave for a few seconds, it should not be completely melted), a pinch of salt, vanilla, grated zest of orange and lemon in a bowl and mix with a fork.
Add the flour, the baking powder, and form a soft and compact dough, always mixing the ingredients with a fork, and then transfer the dough to a lightly floured surface.
Quickly work the dough with your hands, roll it out to form a sort of rectangle about 1/5 inch thick, and cut it into not too precise pieces; then, make a small cut in the center of each piece.
Take a small rectangle and pass the ends inside the slit, first from one side and then from the other. You need to pass the two ends, one from below and one from above, if you pass them from the same side, the small rectangle will return to its shape.
As soon as you have made them all, fry the soft fried bows in hot seed oil until golden, it will take about 2/3 minutes per side, keep the heat medium.
Drain the soft fried bows on absorbent paper and pass them, still warm, in sugar or sugar and cinnamon as I did, they will be even tastier and more fragrant.
Advice:
The soft fried bows can be kept at room temperature for 3/4 days; they remain soft. You can also bake them in the oven or in an air fryer, but they will be less fluffy and more “biscuit-like”; regular sugar obviously won’t stick, so decorate them with powdered sugar.
