Chickpea Taralli

The chickpea taralli are an easy, super quick, and delicious recipe, gluten-free golden and crispy tarallucci, made in less than 10 minutes with only 4 ingredients. I wanted to prepare an appetizer for friends, one of them is celiac, so I thought of something suitable for her. I had chickpea flour in the pantry and decided to make these tarallini, which we all ended up eating because they were really delicious! Chickpea taralli are great as is, simple, or enhanced with various spices and herbs. I used rosemary, but you can use whatever you prefer. They are yeast-free and perfect for vegans, and can also be cooked in an air fryer. So, you have no excuses not to try them 😀

Ingredients

  • 1 1/4 cups chickpea flour
  • 1/3 cup water
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • to taste rosemary (or other spices/herbs)

Steps

  • The chickpea taralli are very simple and quick to prepare. First, put the chickpea flour, extra virgin olive oil, room temperature water, salt, rosemary if desired, or any other spices of your choice in a bowl, and mix all the ingredients using a fork.

  • Transfer the dough onto a work surface dusted with a bit of chickpea flour, form a nice dough ball, break off small pieces, and shape them into cords about half an inch thick, then cut them into pieces about 2-2.5 inches long.

  • Bring the ends of each cord together and overlap them, creating all the chickpea taralli this way. Place them on a baking tray lined with parchment paper and bake them in a preheated oven at 350°F for 15-20 minutes, but do not overbake, or they will become hard.

  • You can also cook the chickpea taralli in an air fryer at 350°F for 14-15 minutes.

Tips:

Chickpea taralli can be stored at room temperature for 4-5 days. You can personalize them with your preferred spices/herbs such as turmeric, black pepper, paprika, thyme, oregano, and much more!
