The carrot chips are really amazing. My daughter Matilde asked me for some chips, obviously, I avoid buying the classic packaged chips, we don’t keep them at home (and I didn’t even have potatoes), so to satisfy her craving, I thought of preparing a healthy and tasty snack at home, using the carrots that she adores. Needless to say, they were a hit! Carrot chips are crispy, light and delicious, they are ready in 5 minutes and you can cook them either in the oven or in an air fryer, season them with the spices you prefer and they are ideal for snacking at any time of the day, as a snack, for an aperitif or a party, but also as an appetizer or vegetarian, gluten-free, vegan side dish, the only advice I give you is to prepare them in abundance because they go fast!

Ingredients
- 3 carrots
- 1 tablespoon extra virgin olive oil
- to taste salt
- to taste black pepper
- to taste spices
Steps
Carrot chips are super easy and fast to prepare, first peel the carrots and slice them very thinly, using a mandoline (if you don’t have a mandoline, slice them with a knife into almost transparent rounds).
Season the carrots with extra virgin olive oil, salt, black pepper, spices to taste (I added sweet paprika and garlic powder) and give them a good toss.
Transfer the carrots onto a non-stick baking tray and spread them out evenly, bake them in a pre-heated oven at 392°F for 15 minutes or in an air fryer for about ten minutes, still at 392°F, turning them halfway through cooking, the carrot chips should be crispy and golden.
Tips:
Carrot chips can be stored at room temperature for a couple of days. You can flavor them with the spices you prefer (turmeric, rosemary, thyme are also great) or leave them simple, using only oil, salt, and pepper.
