Who says meat main course recipes are always long and elaborate? Let’s look at one that’s easy and very quick, but finger-licking good: creamy lemon scallops!

Simply floured meat slices cooked with lemon juice, the ingredients are simple and economical: slices of pork loin or ham, lemon juice, flour for breading, and a knob of butter or alternatively, extra virgin olive oil for pan cooking.

As an alternative to pork, you can also prepare the scallops with slices of chicken or turkey breast, or more tender and juicy veal slices, following the same recipe and cooking method.

Besides the juice, you can add lemon slices to the cooking, with the recommendation to wash the lemon well or use an organic one.

In case of gluten intolerance, you can bread the slices with gluten-free flour. In case of lactose intolerance, use olive oil or lactose-free butter.

My recommendation is to cook them and eat them immediately, hot and fragrant, perhaps garnished with a few lemon slices and accompanied by a light side dish or with crispy roasted potatoes in a pan.

  • 1 lemon (juice)
  • as needed all-purpose flour
  • as needed extra virgin olive oil (or butter)

  • Flour the slices well, then squeeze the lemon and set the juice aside.

    If they are thick, pounding the meat slices is a crucial step to make them more tender and uniform in thickness.

    (Pound the meat with firm but not too violent strokes, starting from the center and moving towards the edges. Try to give uniform strokes to obtain a homogeneous thickness).

  • In a pan, heat a drizzle of oil, add the floured slices and let them brown for a couple of minutes on each side.

    Salt and add the lemon juice.

  • Let it cook for a couple of minutes, until the sauce thickens and has a creamy consistency.
