- Cuisine: Italian
- Seasonality: All seasons
Ingredients
- 14 oz chocolate
- 10.5 oz biscuits
- 1 cup fresh whipping cream (unsweetened)
Steps
The chocolate and cream salami is very simple and quick to prepare. First, melt the chocolate of your choice in the microwave or in a bain-marie, add the fresh liquid cream, unsweetened, and mix well.
Crush the dry biscuits, I used the pestle of a mortar, leaving some pieces slightly coarser, they do not need to be finely ground.
Combine the cream and chocolate mixture with the biscuits and mix everything together well.
Transfer the mixture onto two sheets of plastic wrap, placed on top of each other, and form a sausage shape, squeezing it tightly.
Close the ends like a candy and let the chocolate and cream salami rest in the fridge for at least two hours; it needs to firm up well. If you are short on time, you can also put it in the freezer for at least 30/40 minutes.
After the resting time, unwrap the chocolate and cream salami and, if you like, garnish it with a bit of powdered sugar to simulate the “mold” of a classic salami.
Advice:
The chocolate and cream salami can be stored in the fridge for 4/5 days but you can also freeze it, preferably already sliced, for up to 3 months. For this recipe, you can use any chocolate you prefer: dark, milk, or white. I still had some Easter egg chocolate, and I mixed all three types. You can also choose any dry biscuits you like best; I used Digestive. The cream should be fresh and unsweetened. If you use vegetable/ready-sweetened cream, I would advise using only dark chocolate, otherwise the salami will be a bit too sweet.
