The puff pastry with 4 cheeses and speck is a savory pie made of puff pastry with a delicious, creamy, and cheesy filling. For the filling of this rustic dish, I used four different cheeses: scamorza, sliced processed cheese, sweet gorgonzola, and an herb cheese. The result? A rustic pie that is truly out of this world, the puff pastry with 4 cheeses is perfect as an appetizer, main course, or single dish; it is also great for a party, buffet, or aperitif. Prepare your taste buds for an explosion of flavor (and more)!

Ingredients
- 14 oz cheeses
- 3.5 oz speck
- 2 rolls puff pastry (rectangular)
- 1 egg
- to taste poppy seeds
Steps
The puff pastry with 4 cheeses and speck is very easy and quick to prepare. First, unroll a sheet of puff pastry and fill it with slices of speck.
Add the cheeses you prefer. I used scamorza, sliced processed cheese, sweet gorgonzola (but spicy is also fine), and an herb cheese.
Cover with the second sheet, seal the edges, and fold them inward. Brush the surface with beaten egg, add some poppy seeds (or sesame seeds), and prick the surface with a toothpick.
Bake the puff pastry with 4 cheeses and speck in a preheated oven at 350 degrees Fahrenheit for about 30 minutes until it is golden.
Tips:
The puff pastry with 4 cheeses can be stored at room temperature for a few hours or in the fridge for a couple of days. You can replace speck with cooked ham or other cold cuts as desired. For a vegetarian version, you can omit them. Feel free to use the cheeses you like most, you can replace some with robiola, stracchino, crescenza, grated Parmigiano, mozzarella, Brie, etc.
