The no-knead spoon rolls are a super quick and clever recipe to make homemade bread, without even getting your hands dirty, not even once. I wrote no-knead not because there isn’t any actual dough, but because they are made without having to spend a lot of time kneading and without using mixers, stand mixers or other appliances. You won’t even use your bare hands, work everything and make the rolls using a simple tablespoon and they will turn out soft bites, tender and crispy outside, delicious on their own and perfect to fill as you prefer. Now you have no more excuses for not making homemade bread, there isn’t a simpler and more practical recipe than this!

Ingredients
- 1 1/3 cups water (lukewarm)
- 2 cups all-purpose flour
- 2 cups semolina flour
- 2 tsp salt
- 1 1/2 tsp fresh yeast
- 1 pinch sugar
Steps
The no-knead spoon rolls are very simple and quick to prepare, first put both flours, the crumbled fresh yeast, sugar, and lukewarm water in a bowl and quickly mix all the ingredients using a spoon.
Add the salt and mix again, don’t worry if the dough isn’t perfectly homogeneous, it should be like that, quite “rustic.”
Cover the bowl with a cloth, after 20 minutes do a round of quick folds, always using the spoon, do this operation two more times, each time 20 minutes apart (so 3 rounds of folds in total, every twenty minutes, always using the spoon).
After the last round of folds, let the dough rise for two hours. Once the time has passed, deflate the dough and scoop out some using the spoon, make the rolls by placing 6 “spoonfuls” on a baking tray sprinkled with semolina, sprinkle a light dusting of semolina on top (using a sieve) and let the spoon rolls rise for half an hour (up to an hour if the temperature is low).
Bake the no-knead spoon rolls in a preheated oven at 425°F for 25/30 minutes, they should be golden on the surface.
Advice:
No-knead spoon rolls can be kept at room temperature for 3/4 days. If you prefer, you can use only all-purpose flour or only semolina, with semolina they will be tastier and crunchier.
