The zucchini and ham flatbread with puff pastry and cheese is a very quick, clever, and super delicious savory pie. In the countryside, we are producing a lot of zucchinis, I had a roll of puff pastry nearing its expiration date, so I decided to make, following a recipe I had done some time ago, the potato and speck flatbread, this delicious rustic pastry. Crunchy and extremely tasty, the zucchini and ham flatbread is truly delicious, you prepare it in 10 minutes and it is perfect as a dinner saver recipe, for an appetizer, as a starter, for a party, or a buffet, it will disappear in no time!

Ingredients
- 14 oz zucchinis
- 7 oz scamorza
- 3.5 oz cooked ham
- 1.75 oz Parmesan cheese
- 1 roll puff pastry (rectangular)
- to taste salt
- to taste black pepper
- to taste extra virgin olive oil
Steps
The zucchini and ham flatbread is very simple and quick to prepare. First, clean the zucchinis, remove the ends, and grate them with a large hole grater (the kind you use for grating cheese into slices), then pat them with kitchen paper to remove excess liquid.
Add the grated scamorza (again with the large hole grater), the grated Parmesan, salt, black pepper, and mix everything together.
Unroll the puff pastry and place it on the baking sheet, keeping the parchment paper underneath, add the slices of cooked ham, and the zucchini and cheese mixture, distribute it evenly.
Fold the edges of the pastry towards the inside, add a spray of oil on the surface (if you don’t have a sprayer, brush the oil with a kitchen brush) and bake the zucchini and ham flatbread in a preheated oven at 392°F for about 30 minutes, it should be golden brown.
Notes:
The zucchini and ham flatbread can be stored at room temperature for a few hours or in the fridge for a couple of days. Instead of cooked ham, you can also use speck.
