I wanted to make a sweet treat with apples and thought of this cake which can be prepared in a few minutes and with 3 different layers, for a unique flavor! The crunchy apple cake is a true delight, perfect for breakfast or a snack; I added some sliced almonds to the crumble to make it even tastier, richer, and crunchier, and if you like, you can also put a thin layer of jam over the fruit, it will be simply irresistible!

- 1 1/4 cups all-purpose flour
- 5 tbsp butter
- 1/4 cup sugar
- 1/4 cup sliced almonds
- 1 pinch salt
- Half lemon zest

- 3/8 cup sugar

- 2 eggs
- 2 apples
- 1 packet baking powder
- 1 pinch salt

Steps
The crunchy apple cake is very simple and quick to prepare, first make the crumble, the crunchy part: in a bowl, combine the flour, sugar, a pinch of salt, butter in small pieces, grated lemon zest, and quickly mix with a fork until you get a crumbly mixture, add the sliced almonds and set aside.
Peel the apples, cut them into thin slices, and season them with lemon juice and sugar.
Beat the eggs with the sugar using an electric mixer until they become light and fluffy. Add the milk, melted butter, flour, baking powder, and lemon zest, and mix all the ingredients well.
Transfer the batter into a pan lined with parchment paper, place the apple slices on top, the crumbly mixture, and bake the crunchy apple cake in a preheated oven at 350°F for 40/45 minutes until it is well golden on the surface.
Finish the crunchy apple cake with a dusting of powdered sugar.
Tips:
The crunchy apple cake can be stored at room temperature for 4/5 days. If you prefer, you can also replace the melted butter with vegetable oil. If you don’t want to include almonds in the crumble, simply omit them. For an even more indulgent version, you can add a little bit of jam of your choice over the apples.
