The pan-fried potatoes and onions is a simple yet delicious recipe, a tasty and delightful vegetarian (also vegan) side dish. I wanted to prepare a potato side dish for dinner but didn’t feel like baking them, so I did everything in the pan. I also added some breadcrumbs to make them “sandy” and they turned out too good, the pan-fried potatoes and onions are soft with a crunchy crust, thanks to a little trick, plus, you don’t have to use much oil to cook them, they are not fried!

Ingredients
- 1/3 cup breadcrumbs
- 3 potatoes (medium)
- 2 onions
- 2 tablespoons extra virgin olive oil
- 1/4 cup water
- to taste salt
- to taste black pepper
- to taste spices
Steps
Pan-fried potatoes and onions are very simple and quick to prepare, first peel the potatoes and cut them into chunks, place them in a pan and add the peeled and chopped onions.
Pour the water, cover with a lid and let cook for about ten minutes, the water should be completely absorbed.
At this point add the extra virgin olive oil and continue cooking for 10 minutes, stirring occasionally.
As soon as the pan-fried potatoes and onions are nicely golden, season with salt, black pepper, spices to taste, and breadcrumbs, let them flavor for a couple of minutes, so that the breadcrumbs also toast.
Tips:
Sandy pan-fried potatoes and onions can be stored at room temperature for a few hours or in the fridge for a couple of days. To make them richer and more delicious, you can add some grated cheese, diced speck, or pancetta.
