I wanted to prepare mini pizzas for dinner, but at the last minute, I realized I didn’t have tomatoes, so I topped them with zucchini and smoked cheese. What a marvel! - 7 oz plain yogurt (unsweetened)
- 5 oz smoked cheese
- 1 packet instant yeast for savory preparations
- 1 zucchini

Steps
Zucchini mini pizzas with yogurt are super easy and quick to prepare. First, put the yogurt, flour, yeast, and salt in a bowl and mix to form a soft and compact dough.
Work the dough on a lightly floured surface, divide it into 6 equal parts, and form balls.
Place the dough balls on a baking sheet and flatten them with oiled hands, top the mini pizzas with very thinly sliced zucchini, sprinkle a bit of salt, add small pieces of smoked cheese, a drizzle of extra virgin olive oil, and bake the zucchini mini pizzas in a preheated oven at 350°F for about 25 minutes.
Notes:
Zucchini mini pizzas can be stored at room temperature for a few hours or in the fridge for a couple of days. For a more indulgent version, you can also add some cooked ham or speck.
