Strawberry cookies are fragrant and delicious shortcrust pastry cookies with a soft and creamy filling of fresh strawberries. We have already started collecting the first strawberries in the countryside, and I wanted to use some to prepare delightful little cookies that, as expected, were quickly devoured. Strawberry cookies are crumbly and tasty, made into a single log and then sliced into cookies once cooked, they are delicious on their own and perfect for dipping in milk, tea, or cappuccino, and you’ll surely add them to your list of favorite breakfast treats!

Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup sugar
- 7 tbsps butter
- 1 cup strawberries
- 1 egg
- 1 lemon zest
- 1 pinch salt
- 1 tsp baking powder
- as needed powdered sugar
Steps
Strawberry cookies are very easy and quick to prepare; first, clean the strawberries and cut them into small pieces.
In a bowl, place the flour, sugar, baking powder, and a pinch of salt and mix with a fork.
Add the room temperature butter, cut into small pieces, the egg, the grated lemon zest, and knead all the ingredients until you get a smooth dough.
Roll out the shortcrust pastry on a sheet of parchment paper, making a rectangle about 1/4 inch thick. Fill the surface with the strawberries cut into small pieces, leaving a bit of margin along the top edge (about 1.5-2 inches).
Using the parchment paper underneath, form a roll and seal the ends well, placing the seam side down.
Transfer the log to a baking tray and bake the dessert in a preheated oven at 350 degrees Fahrenheit for about 35 minutes. Remove it from the oven, let it cool slightly, and cut it into slices about 3/4 inch thick.
Finish the strawberry cookies obtained with a sprinkle of powdered sugar.
Notes:
Strawberry cookies keep well at room temperature for 3-4 days. You can substitute the butter with 1/3 cup of vegetable oil; you may also need a few drops of milk.
