The tuna loaf is a smart and quick recipe that is prepared in 5 minutes, with few and simple ingredients. I didn’t know what to prepare for dinner, my fridge was practically empty but, in the pantry, there is always some canned tuna, so I decided to make a sort of flatbread with a few cans of tuna and little else, it’s soft and tasty, perfect with a side of roasted potatoes or a salad, delicious served with some mayonnaise, it’s perfect as an appetizer or main course, but also for an aperitif or buffet if cut into small pieces, great both hot and cold, it’s too good!

Ingredients
- 10 oz tuna in oil (drained weight)
- 1/3 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 sprig parsley
- 1 clove garlic
- to taste salt
- to taste black pepper
- to taste extra virgin olive oil
Steps
The tuna loaf is super easy and quick to prepare, first put the drained tuna, egg, grated Parmesan cheese, bread crumbs, chopped garlic, and parsley, salt, and black pepper into a bowl and mix all the ingredients well, stir with a fork and then knead with your hands.
Transfer the mixture into a non-stick pan, lightly greased with a little olive oil, level it well, sprinkle some bread crumbs on top, a drizzle of extra virgin olive oil, and bake the tuna loaf in a preheated oven at 392°F for about 20 minutes, it should be slightly golden.
Notes:
The tuna loaf keeps at room temperature for a few hours or in the fridge for a couple of days.
