Coconut and Almond Treats

The coconut and almond treats with white chocolate and cornflakes are clever and super quick to make, reminiscent of the famous Raffaello chocolates. I still have some Easter egg chocolate to use up and, to consume a good amount, I made these little treats that were literally snatched up! The coconut and almond treats are prepared in 10 minutes, I could say they are no-bake, except that it’s better to toast the almonds to make them tastier and crunchier (optional step, which you can skip if you prefer them more “soft”), they are delicious and very fancy and can be stored for several days (but they won’t last that long), be careful though as they are addictive, they will be your new obsession 😀

Ingredients

  • 12.35 oz white chocolate
  • 2.65 oz sliced almonds
  • 1.75 oz corn flakes
  • 0.88 oz coconut flakes
  • 0.88 oz shredded coconut
  • as needed shredded coconut (for topping)

Steps

  • The coconut and almond treats with corn flakes and white chocolate are super easy and quick to prepare. First, toast the almonds; it’s an optional step, but I suggest you do it to make them tastier and crunchier. Bake them in a preheated oven at 392°F for about 5 minutes or in an air fryer at 392°F for 3-4 minutes, stirring halfway through.

  • Melt the white chocolate in the microwave (at 600w for 2-3 minutes, stirring after a minute) or in a double boiler.

  • Add the toasted almonds, cornflakes, coconut flakes, and shredded coconut, and mix well all the ingredients.

  • Scoop a bit of the mixture with a teaspoon and form small mounds on a sheet of parchment paper, finishing the coconut and almond treats with a sprinkle of shredded coconut.

  • Let the coconut and almond treats with corn flakes and white chocolate rest at room temperature for about 30 minutes or until they have solidified. Alternatively, you can put them in the fridge for 15 minutes.

Notes:

The coconut and almond treats can be stored at room temperature for up to a week. If it is very hot (or in summer), place them in the fridge. If you don’t have coconut flakes, replace them with sliced almonds.
