Ingredients
- 3.5 oz stracciatella
- 20 cherry tomatoes
- 2 tbsp brown sugar
- 2 cloves garlic
- 2 tbsp extra virgin olive oil
- 1 roll shortcrust pastry (round)

Steps
The savory cherry tomato tart is extremely easy and quick to prepare. First, clean the cherry tomatoes and cut them in half, place them in a round baking dish lined with parchment paper, add chopped garlic, extra virgin olive oil, salt, black pepper, brown sugar, and mix well.
Arrange the cherry tomatoes so that the cut side is facing up and cover them with the shortcrust pastry.
Trim any excess, fold the edges inward, make small slits, and bake the savory cherry tomato tart in a preheated oven at 392°F for about 25 minutes; it should be golden brown.
Once cooked, carefully flip the savory cherry tomato tart and garnish it with a bit of stracciatella and a few basil leaves.
Tips:
The savory cherry tomato tart can be kept at room temperature (with the cheese) for a couple of hours. If you want to serve it a bit later, add the cheese just before eating. In the fridge, it keeps for a couple of days. If you don’t want to add the brown sugar, you can omit it; the cherry tomatoes, of course, will not be “caramelized.”
