Chocolate Pandoro Truffles

The chocolate pandoro truffles are no-bake holiday treats that are easy, delicious, and super chocolatey. A few days ago, I made a fabulous dessert with pandoro that I will publish in the coming days, and with the leftovers (knowing also that I love truffles and have made so many), I created these super quick and delicious treats. The chocolate pandoro truffles can be made in 10 minutes without cooking anything and with just a few simple ingredients. I garnished them with a double coating of cocoa and shredded coconut. They keep well for several days, so you can easily make them in advance and you can also make them an “adult version” by adding a liqueur of your choice. These chocolate pandoro truffles are perfect for last-minute preparations, for a dinner or lunch invitation, Christmas, Christmas Eve, New Year’s Eve, New Year, and Epiphany, and they are also perfect for putting in the Befana’s stocking!

Ingredients

  • 3 1/2 cups pandoro
  • 5.3 oz dark chocolate
  • 5 tbsp water
  • to taste vanilla
  • to taste shredded coconut and unsweetened cocoa powder for decorating

Steps

  • The chocolate pandoro truffles are super easy and quick to prepare. First, melt the dark chocolate in the microwave or in a bain-marie.

  • Place the pandoro pieces in a food processor and chop them until they turn into crumbs.

  • In a bowl, combine the chopped pandoro, water, vanilla, and melted chocolate. Mix well until you have a compact and homogeneous mixture.

  • Take a bit of the mixture and form it into balls. Roll some chocolate pandoro truffles in shredded coconut and others in unsweetened cocoa powder.

  • Place the sweet balls on a tray and let them sit for at least 15 minutes at room temperature to firm up.

Notes:

The chocolate pandoro truffles can be stored at room temperature for up to ten days. You can substitute 1.7 oz of water with 1.7 oz of liqueur of your choice. Instead of dark chocolate, you can also use white or milk chocolate. For the coating, you can also use chopped nuts of your choice.
