Zucchini and Bacon Rolls

‘The Zucchini and Bacon Rolls are quick, super easy, and incredibly delicious rolls that I’m sure will disappear in no time! I had some bacon about to expire, so I decided to make these delicious skewers that, needless to say, vanished in two seconds. Crunchy, cheesy, and delicious, these Zucchini and Bacon Rolls can be made in just a few minutes with simple ingredients, but they are truly amazing, perfect as a main course or appetizer. You can bake them in the oven or air fryer with just a little oil!

Ingredients

  • 7 oz bacon
  • 5 oz scamorza cheese
  • 2/3 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 zucchini
  • to taste spices
  • to taste extra virgin olive oil

Steps

  • Zucchini and Bacon Rolls are super easy and quick to prepare. First, clean the zucchini and cut them into very thin slices. If you have a mandoline, feel free to use it.

  • Overlap two slices of zucchini, stuff the base with a small piece of scamorza cheese, form a roll, and wrap it in some bacon. I used the coppa type, but regular streaky bacon works too.

  • Season the breadcrumbs with grated Parmesan cheese and spices to taste (I used dried parsley, dried rosemary, and black pepper) and bread all the Zucchini and Bacon Rolls.

  • Skewer the Zucchini and Bacon Rolls (I made 5 with 6 rolls each and one with 5), place them on a non-stick baking tray, drizzle with a little extra virgin olive oil, and bake in a preheated oven at 400°F for about 15 minutes until golden.

Notes:

Zucchini and Bacon Rolls can be stored at room temperature for a few hours or in the fridge for a couple of days. You can use either streaky bacon or coppa bacon. You can use mozzarella or another cheese of your choice.
