Potato Rolls

The potato rolls are a super tasty, quick, and delicious recipe, a second course that both adults and children will love. I had some potatoes to use up, so I decided to make stuffed rolls filled with roasted ham and smoked cheese. Needless to say, they disappeared in no time! The potato rolls are soft inside and crispy outside, with a stringy filling and a coating with a egg-free batter. I didn’t fry them but baked them in the oven. If you prefer, you can also fry them or cook them in an air fryer; either way, they will be super tasty!

Ingredients

  • 2.2 lbs potatoes
  • 3.5 oz Parmesan cheese
  • 5.3 oz smoked cheese
  • 3.5 oz roasted ham
  • 1 egg
  • to taste salt
  • to taste black pepper
  • 2/3 cup water
  • 3/4 cup all-purpose flour
  • to taste salt
  • to taste spices
  • to taste breadcrumbs

Steps

  • Potato rolls are very simple and quick to prepare. First, boil the potatoes with their skins until they are tender when pierced with a fork.

  • Mash the potatoes with a potato masher until pureed. Peel them if you don’t have a masher that retains the skins.

  • Season the puree with the egg, grated Parmesan cheese, salt, and black pepper, and mix all the ingredients well.

  • Sprinkle some breadcrumbs on a sheet of parchment paper and spread the potato mixture on top, forming a rectangle about 0.4 inches thick. Then cut it into 4 vertical parts and in half horizontally, yielding 8 small rectangles.

  • Fill each piece with some roasted ham and smoked cheese and roll them up to form a roll, sealing the ends well and compacting them firmly.

  • Make a batter by mixing water, flour, and a pinch of salt, then dip the potato rolls first in this batter and then in breadcrumbs seasoned with spices of your choice (I used paprika, rosemary, and garlic powder).

  • Place the potato rolls on a baking sheet lined with parchment paper, drizzle with extra virgin olive oil, and bake in a preheated oven at 392°F for about 20 minutes until golden brown.

Notes:

The potato rolls can be kept at room temperature for a few hours or in the fridge for a couple of days. You can customize them with your preferred filling and cook them in an air fryer at 356°F for 15-18 minutes or fry them in hot seed oil.
