The chicken and potato croquettes with onions are super easy, quick, and smart meatballs. I had a chicken breast to cook but didn’t feel like making the usual cutlets, so I decided to blend it, adding a boiled potato, a raw onion, a few other ingredients, and form these delicious breading-free nuggets. The chicken and potato croquettes are tender, soft inside and golden outside, tasty and delicious, perfect to accompany with your favorite sauces or a salad, they will solve your dinner in no time, they are truly irresistible, perfect also for Easter or Easter Monday picnics!

Ingredients

  • 1.1 lbs chicken breast
  • 1 medium boiled potato
  • 1 small onion
  • 1 egg
  • 1 tbsp potato starch
  • to taste salt
  • to taste black pepper
  • to taste spices
  • to taste extra virgin olive oil

Steps

  • The chicken and potato croquettes are super easy and very quick to prepare. First, place the chicken breast, peeled and diced boiled potato, peeled and halved onion, egg, potato starch, salt, black pepper, spices to taste (I used paprika, thyme, and rosemary), into a food processor, and blend all the ingredients until you get a soft and homogeneous mixture.

  • Oil your hands, take a bit of the mixture with a spoon, and form croquettes. Then place the chicken and potato croquettes on a non-stick baking tray and bake them in a preheated oven at 392°F for about 20 minutes. There will be no need to add more oil before baking them, as they will already be greased.

Tips:

Chicken and potato croquettes can be stored in the fridge for a couple of days. If you don’t want to include onion, you can omit it or replace it with a garlic clove. To compact the meatballs, it’s necessary to oil your hands as the mixture is very soft. You can cook the potato as you prefer: steamed, microwaved, or boiled, either whole or in pieces. You can also cook them in an air fryer for about twenty minutes or fry them.
