The baked chicken with vegetables is a quick, clever, and delicious recipe, a second course with a side dish that is prepared in just a few minutes. I had some chicken breast to cook, quite a lot of fresh vegetables to use, and I thought of preparing a unique dish, for the whole family, using only one baking tray. That’s it, you won’t dirty anything else, you don’t have to pre-cook or blanch the vegetables first. In just a few minutes and with few and simple ingredients, you will bring to the table a very tasty dish that will also please the little ones, many pieces of tender and crunchy chicken, accompanied by delicious crumbly vegetables. You can also cook them in an air fryer!

Ingredients

  • 1.1 lbs chicken breast
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 10 cherry tomatoes
  • 3 small bell peppers
  • 2 tbsps extra virgin olive oil
  • 1 large zucchini
  • 1 large potato
  • 1 onion
  • Half eggplant
  • to taste salt
  • to taste black pepper
  • to taste oregano

Steps

  • The baked chicken with vegetables is very simple and quick to prepare. First, clean the vegetables, cut them into small pieces (do not make them too large, especially for the potatoes, otherwise they will not cook well) and place them in a non-stick baking tray.

  • Add the chicken cut into strips (or pieces) and season everything with oil, salt, and black pepper. Then add the halved cherry tomatoes, breadcrumbs, grated Parmesan cheese, and mix all the ingredients well.

  • Pour a bit of oil over the chicken with vegetables and bake in a preheated oven at 392 °F for about 35 minutes. Halfway through cooking (after about twenty minutes), add some oregano, give a quick stir, and add another bit of breadcrumbs and oil. In this way, the cooking will be more uniform, and neither the meat nor the vegetables will be soggy or under-crispy.

Tips:

The baked chicken with vegetables keeps in the fridge for a couple of days. You can use the vegetables you prefer, skip some, and add more of others; choose your favorites. You can also cook it in an air fryer at 374 °F for about thirty minutes.
