Pistachio Shrimp Skewers

The pistachio shrimp skewers are an easy, quick, and delicious seafood main course. I had some large shrimps and thought of preparing a great recipe perfect for the Christmas holidays, so I peeled them, coated them with a delicious breading in a pistachio crust and baked them in the oven. How good were they? The pistachio shrimp skewers are tender inside and crunchy outside, you can make them with either fresh or frozen shrimp, they are ideal as a seafood main course for Christmas Eve dinner or New Year’s lunch, but they are also great as an appetizer, perhaps paired with some cocktail sauce, they will be a hit!

Ingredients

  • 1/2 cup breadcrumbs
  • 1/3 cup pistachios
  • 16 large shrimp
  • 1 sprig parsley
  • 1 clove garlic
  • 1 lemon
  • 1 tbsp extra virgin olive oil
  • to taste salt
  • to taste black pepper
  • to taste extra virgin olive oil

Steps

  • The pistachio shrimp skewers are very simple and quick to prepare, for this recipe you can use either fresh or frozen shrimp, if you choose the latter, let them thaw completely before cooking.

  • Clean the shrimp thoroughly, removing the head, tail, shell, and intestine (the dark vein on the back, remove it with a toothpick).

  • Place the cleaned shrimp in a bowl and season with salt, black pepper, grated lemon zest, and lemon juice, extra virgin olive oil, and mix.

  • Season the breadcrumbs with the pistachios, garlic, chopped parsley, and mix.

  • Score the back of the shrimp with a knife, being careful not to cut too much, and coat them in the breading, then skewer them with a toothpick, gently bending them, I put 4 on each skewer.

  • After assembling all, pass the pistachio shrimp skewers in the remaining breading and arrange them on a baking tray, drizzle with a bit of oil, and bake in a preheated oven at 400°F for 15–20 minutes.

Notes:

The pistachio shrimp skewers can be stored at room temperature for a couple of days. You can also prepare them the day before (only if the shrimp are fresh) and cook them just before serving. If you don’t want to use pistachio, substitute it with breadcrumbs.
