Baked Pumpkin Fritters

The baked pumpkin fritters are an incredibly easy, delicious, and super tasty recipe to prepare in 10 minutes. Yes, here’s yet another pumpkin recipe, you know I love it, but this one is so clever! I wanted to make savory fritters for dinner, didn’t want to fry them, so I decided to bake them with a little trick to make them soft and crispy at the same time. I couldn’t even get them all to the table! The baked pumpkin fritters are light and egg-free, you make them with grated pumpkin, so you don’t need to cook it first, they are great as an appetizer, side dish, or vegetarian/vegan main course, and even the little ones will love them!

Ingredients

  • 1.1 lbs pumpkin (already cleaned)
  • 1/3 cup all-purpose flour
  • to taste salt
  • to taste black pepper
  • to taste spices
  • to taste extra virgin olive oil

Steps

  • The baked pumpkin fritters are super easy and quick to prepare. First, clean the pumpkin, remove the skin and seeds, and grate it directly into a bowl with a coarse grater. Pat it dry with paper towels to remove excess moisture.

  • Add the flour, salt, black pepper, spices to taste (I used rosemary and garlic powder) and mix everything together.

  • Take a bit of the mixture with a spoon and flatten it in the palm of your hand to form the baked pumpkin fritters.

  • Place the baked pumpkin fritters on a baking sheet greased with a little extra virgin olive oil and brush the tops with a bit of oil.

  • Bake the baked pumpkin fritters in a preheated oven at 428 degrees Fahrenheit for about 20 minutes until they are golden brown.

Notes:

The baked pumpkin fritters can be kept at room temperature for a few hours or in the fridge for 2/3 days. You can flavor them with your preferred spices, and you can also add some grated Parmesan to the mixture. If you want to make them gluten-free, replace the all-purpose flour with rice flour.
