The meat roll-ups with radicchio are a delicious autumn/winter main course, delightful and super tender, with a tasty and gooey filling. I love meat chops (as we call them in Sicily), and these are among my absolute favorites. Tasty and very appetizing, meat roll-ups with radicchio are prepared in just a few minutes and then into the oven, they are great for any occasion, from a simple lunch to a Sunday meal to Christmas holidays, they are perfect if, for Christmas or New Year’s, you want to prepare a meat main course that will win over all your friends and family with little effort, you can also prepare them in advance or freeze them to have them ready, you must try them absolutely!

Ingredients

  • 8.75 oz scamorza
  • 3 cups bread crumbs
  • 1.75 oz grated Parmesan cheese
  • 16 slices pork loin
  • 1 radicchio (small)
  • 1 sprig parsley
  • 1 clove garlic
  • to taste oregano
  • to taste salt
  • to taste black pepper
  • to taste extra virgin olive oil

Steps

  • Meat roll-ups with radicchio are super easy and quick to prepare. First, season the meat slices with a drizzle of extra virgin olive oil, salt, and black pepper.

  • Season the bread crumbs with minced garlic and parsley, oregano, and grated Parmesan cheese. Coat the meat slices evenly on both sides. Rinse the radicchio, separate the leaves, dry them, and add salt.

  • Take a slice of pork loin, fill it with a radicchio leaf folded in half, a slice of scamorza, and form a roll-up, rolling it tightly.

  • Make all the meat roll-ups with radicchio in this way and skewer them with two skewers. I placed 4 chops on each skewer.

  • Pass the skewers in the remaining breading, place them on a baking sheet, drizzle with extra virgin olive oil, and bake in a preheated oven at 392°F for 20-25 minutes until golden.

Notes:

Meat roll-ups with radicchio can be stored in the fridge for 2-3 days, either cooked or raw. You can prepare them in advance and cook them when ready to serve. You can also freeze them, let them thaw, and then proceed with cooking. I used pork loin, but veal slices, chicken breast, or turkey work just fine. You can also cook the chops in a pan, with or without oil, on the griddle, grill, or in the air fryer.
