The white chocolate cookies are truly special treats. I love white chocolate, and while browsing the web I saw a similar recipe on a Turkish channel and immediately felt like making these cookies. I revised the recipe because it contained a lot of butter and sugar, and I created a much lighter but equally delicious version. White chocolate cookies are soft and very fragrant, without butter, delicious on their own and great for dipping into milk, cappuccino, or hot chocolate, perfect for gifting at Christmas as they keep for several days. Try them, they are truly amazing!
- Difficulty: Easy
- Cost: Cheap
- Preparation time: 15 Minutes
- Portions: 24-25 white chocolate cookies
- Cooking methods: Oven, Electric oven
- Cuisine: Italian
- Seasonality: All seasons
Ingredients
- 12 oz all-purpose flour
- 5/8 cup sugar
- 3.5 oz white chocolate
- 3 1/2 tbsp vegetable oil
- 2 eggs
- 1 tsp baking powder
- 1 lemon zest
- 1 pinch salt
Steps
White chocolate cookies are very simple and quick to prepare. First, place the eggs, sugar, a pinch of salt, vegetable oil, grated lemon (or orange if you prefer) zest, melted white chocolate (in the microwave or double boiler) in a bowl and mix everything with a fork.
Add the flour, baking powder, and mix. You will obtain a soft and homogeneous dough. Work it on a lightly floured surface, break off small pieces, form balls, and gently flatten them.
Place the white chocolate cookies on a baking sheet lined with parchment paper and, using the blade of a knife, tap the surface of the cookies to create a “rustic” look.
Bake the white chocolate cookies in a preheated oven at 350 degrees Fahrenheit for about 20 minutes, until they are lightly golden.
Notes:
White chocolate cookies can be stored at room temperature for about fifteen days. Instead of vegetable oil, you can use melted butter, you will need 2 oz.
