Cheese Crackers

The cheese crackers are rustic biscuits without dough that are super quick and clever to prepare. Without dough because, to make them, you don’t need to knead with your hands, just put everything in a blender, blend, and they are ready to shape. No cookie cutters or anything else needed; they are just like the ones you buy but, of course, from today you won’t buy them anymore! These cheese crackers are irresistible, forget cherries, these are a one-after-another treat (I would say almost like my beloved glass crackers :D). They are perfect as an appetizer or for a homemade aperitif, also ideal for Easter and Easter Monday. They are cheesy, crispy and crunchy as we like them, fabulous!

Ingredients

  • 8 oz cheddar
  • 1 cup all-purpose flour
  • 3.5 tbsp butter
  • 1.7 tbsp water
  • Half tsp salt

Steps

  • Cheese crackers are super easy and quick to prepare. First, put the flour, chopped cheddar, and salt in a food processor and blend until a homogeneous mixture is obtained. Add the cold butter in pieces and blend again.

  • Add cold (or room temperature) water and blend to thoroughly combine all the ingredients. The dough will be soft but not sticky.

  • Transfer the dough to a lightly floured surface and roll it out to a thickness of 1/8 inch. With a plain wheel or a knife, cut squares of about 3/4 inch and poke the center with the base of a wooden toothpick.

  • Place the cheese crackers on a baking sheet and bake in a preheated oven at 392°F for 20 minutes or until golden.

Tips:

Cheese crackers can be stored at room temperature for up to ten days. Keep them in an airtight container to keep them nice and crunchy. If you can’t find cheddar, you can replace it with a similar semi-hard cheese, like Emmental, though the color will be lighter.
