Cheesy Chicken Bites

The cheesy chicken bites are an easy, quick, and delicious oven-baked meat dish. I wanted to cook breaded chicken breast for dinner, but then I thought of making a more tantalizing recipe by cutting the meat into chunks, stuffing them with cheese, and then coating them in breadcrumbs, adding some corn flour for extra crispness. They were a hit! The cheesy chicken bites are crispy and golden on the outside and tender and gooey on the inside, perfect on their own, ideal to pair with your favorite sauces and sides. I opted for a simple salad, but roasted potatoes would be the best!

Ingredients

  • 1.5 lbs chicken breast
  • 4.4 oz scamorza cheese
  • 3.5 oz corn flour
  • 1.8 oz breadcrumbs
  • 2 eggs
  • as needed all-purpose flour
  • to taste spices (as preferred)
  • to taste salt
  • to taste black pepper
  • as needed extra virgin olive oil

Steps

  • Cheesy chicken bites are super easy and quick to prepare. First, take the chicken breast, cut it into chunks (don’t make them too small), and salt them. Using kitchen scissors, make a deep cut in each bite to create a sort of “pocket” to insert a piece of scamorza cheese.

  • Mix the breadcrumbs with the corn flour and spices to taste (I used sweet paprika, rosemary, thyme, and oregano). After stuffing all the chicken bites, dip them in the all-purpose flour, then in the beaten eggs, and finally in the breadcrumb mixture.

  • Place the cheesy chicken bites on a baking tray, drizzle with a little extra virgin olive oil, and cook them in a preheated oven at 392°F (200°C) for 20-25 minutes until they are golden brown.

Notes:

Cheesy chicken bites can be stored at room temperature for a few hours or in the fridge for a couple of days. If you don’t want to use corn flour for the coating, just use breadcrumbs.
