I had some sausage and gorgonzola to use up, so I decided to make a nice dish of potato gnocchi for lunch. What better sauce than this? Gnocchi with sausage and gorgonzola is super flavorful, creamy, and “stringy” thanks to the very thinly sliced onion, which really resembles stringy cheese, and the crispy sausage is amazing! - 1.1 lbs potato gnocchi
- 9 oz sausage
- 9 oz gorgonzola
- 2 tbsp extra virgin olive oil
- Half red onion
- to taste salt
- to taste black pepper
- to taste spices
Steps
Gnocchi with sausage and gorgonzola is super easy and quick to prepare. First, remove the sausage casing, crumble it, and brown it in a pan (without adding anything) until it becomes crispy, then set it aside.
In the same pan, put the very thinly sliced onion (if you have a mandolin, feel free to use it), extra virgin olive oil, and sauté it for a minute. Meanwhile, cook the potato gnocchi in boiling salted water for 2-3 minutes.
Add some sausage (keep a couple of tablespoons aside) and let it quickly flavor, then add the gorgonzola, black pepper, spices to taste (I used thyme and rosemary), a little gnocchi cooking water, and as soon as a nice creamy sauce forms, add the al dente cooked potato gnocchi, and mix all the ingredients well.
Plate the gnocchi with sausage and gorgonzola, adding the crumbled sausage kept aside on top.
Notes:
Gnocchi with sausage and gorgonzola can be stored in the fridge for a couple of days. To make them taste like freshly made, heat them in a small pot with a splash of water, adjusting salt if necessary. If you don’t like gorgonzola, you can substitute it with stracchino, brie, taleggio, crescenza, robiola, or another creamy cheese. To make them even tastier, you can also add radicchio or sautéed mushrooms.
