Potato rings are a quick, tasty, and super easy recipe to prepare. I wanted to make potatoes as a side dish for dinner, but then I thought of making these delicious little doughnuts that went like hotcakes. Potato rings are soft inside and crispy outside, without eggs, cheese, butter, flour, or yeast. They are made with only 2 main ingredients and are vegetarian, vegan, gluten-free, and lactose-free, making them suitable for everyone, even those with food intolerances. They are baked, not fried, perfect as an appetizer, side dish, main course, or for an aperitif or buffet, truly super!

Ingredients
- 1.1 lbs potatoes
- 0.9 oz cornstarch (or potato starch)
- to taste salt

- to taste extra virgin olive oil
Steps
● Potato rings are super easy and quick to prepare. First, clean the potatoes, peel them, and cut them into pieces. Place them in a pot with cold water, bring to a boil, and cook for about ten minutes until they are soft when pierced with a fork.
● Once cooked, drain the potatoes well and mash them with a fork. Add the cornstarch (or potato starch), spices to taste (I used sweet paprika, rosemary, thyme, and garlic powder), salt, black pepper, and mix everything together. Work the mixture with your hands to get a soft and compact dough.
● Break off 15 small pieces of the same size and form balls. Gently flatten them and, using a finger or the handle of a wooden spoon, make a hole in the center, being careful not to break the rings.
● Place the potato rings thus obtained on a baking sheet lined with parchment paper. Drizzle with a little extra virgin olive oil and bake in a preheated oven at 392°F for 20-25 minutes until they are nicely golden.
Notes:
Potato rings can be stored at room temperature for a few hours or in the fridge for 2-3 days. If you like, you can add some grated Parmesan and/or Pecorino cheese to the dough.
