Potatoes with Gorgonzola

The potatoes with Gorgonzola with onions and walnuts are a simple yet truly delicious dish. For dinner, I wanted to prepare simple baked potatoes, I had some Gorgonzola to use, and I used it to enrich these delicious potatoes. The Gorgonzola potatoes are soft, creamy, golden, and crunchy, you won’t even have to parboil the potatoes beforehand, and to make them, you’ll only dirty one tray. Each bite will never be the same as the last, your taste buds will go into ecstasy! The Gorgonzola potatoes are perfect as a vegetarian side dish or main course, I’m sure you’ll love them 😀

Ingredients

  • 1.65 lbs potatoes
  • 7 oz Gorgonzola
  • 1.75 oz walnut halves
  • 2 onions
  • 2 tbsps extra virgin olive oil
  • to taste salt
  • to taste spices

Steps

  • The potatoes with Gorgonzola are very simple and quick to prepare, first peel the potatoes and cut them into slices about 1/8 inch thick.

  • Place the potato slices in a tray, add the chopped onions, salt, extra virgin olive oil, and mix, then bake in a preheated oven at 392°F for about 20 minutes, stirring occasionally.

  • Remove the potatoes and onions from the oven and season with spices to taste (I used rosemary, thyme, paprika, and garlic powder). Add the Gorgonzola, coarsely chopped walnut halves, and bake for another 5 minutes, just enough time to melt the cheese.

Notes:

The potatoes with Gorgonzola can be stored at room temperature for a few hours or in the fridge for one day. To make them as if freshly made, just heat them up for a few minutes. If you don’t like Gorgonzola, you can use another soft cheese of your choice like stracchino, crescenza, or taleggio.
