- Difficulty: Easy
- Cost: Cheap
- Preparation time: 10 Minutes
- Portions: 4 people
- Cooking methods: Oven, Stovetop
- Cuisine: Italian
- Seasonality: All seasons
Ingredients
- 2.2 lbs potatoes
- 7 oz scamorza cheese
- 3.5 oz cooked ham
- to taste salt
- to taste black pepper
- to taste herbs
- to taste extra virgin olive oil
Steps
● The potato smash is very simple and quick to prepare, first of all, clean the potatoes well, I used a clean sponge without detergent, just to remove any residue, as we will use them with the skin on.
● Put the whole potatoes in a pot and bring them to a boil, cook them until they are soft and you can pierce them with a fork.
● Drain the potatoes well and put them in a non-stick baking dish, greased with a little oil, then mash them with the bottom of a glass, to form a fairly compact base.
● Season the potatoes with salt, black pepper, spices to taste (I used paprika, garlic powder, thyme, and rosemary), pour a little oil on top and bake in a preheated oven at 428°F (220°C) for about 20 minutes.
● Take the base out of the oven, top it with slices of cooked ham (I used herb-cooked ham), diced scamorza cheese and put the potato smash back in the oven for a few minutes (you can also keep the oven off or lower the temperature), just long enough to melt the cheese.
Notes:
The potato smash can be stored at room temperature or in the fridge for a couple of days. You can fill it with the ingredients you prefer, cold cuts, cheese, vegetables, and much more!
