The egg and salmon salad is ready in just a few minutes, and if you cook the eggs beforehand, it will be ready to enjoy in 5 minutes. It’s a perfect single dish (but also appetizer, side, or second course) for summer, nutritious, flavorful, and delicious, perfect to take to the beach, park, office, or wherever you prefer!

Ingredients
- 7 oz smoked salmon
- 9 oz lamb's lettuce (mâche)
- 4 eggs
- 2 tbsp extra virgin olive oil
- 1 lemon
- to taste black olives

Steps
The egg and salmon salad is very simple and quick to prepare. First, place the eggs in a saucepan with cold water, bring to a boil, and let them cook for 9 minutes until they are hard-boiled. Let the eggs cool, peel them, and cut them into large pieces.
In a bowl, combine the lamb’s lettuce, eggs, smoked salmon pieces, pitted olives, the juice of one lemon, extra virgin olive oil, salt, and black pepper, and mix all the ingredients well.
Notes:
The egg and salmon salad should be made and enjoyed in a short time. I do not recommend storing it for more than half a day.
