No-Bake Tuna Meatloaf

The no-bake tuna meatloaf is a super quick, clever, and delicious summer recipe. I didn’t know what to have for dinner, I craved a fresh and nutritious dish but didn’t feel like cooking anything, turning on the oven, or standing over the stove, so I grabbed a couple of ingredients I had in the pantry and the fridge and made this delightful cold loaf with canned tuna. A real treat! The no-bake tuna meatloaf is soft, tasty, and very tempting, without potatoes and eggs. To make it even better, I added a simple oil and lemon dressing. It’s perfect as a second course or appetizer, great for an aperitif or cocktail dinner, try it 😀

Ingredients

  • 12.3 oz sandwich bread
  • 7 oz cream cheese
  • 5.3 oz tuna
  • 3 tbsp extra virgin olive oil
  • 1 lemon juice
  • to taste salt
  • to taste black pepper

Steps

  • ● The no-bake tuna meatloaf is super easy and quick to prepare. First, break the sandwich bread into pieces and finely chop it into crumbs.

  • ● Add the drained tuna, salt, black pepper, cream cheese and mix all the ingredients well, then work the mixture with your hands to combine everything better.

  • ● Transfer the mixture onto two sheets of plastic wrap and form a loaf, wrap it with the plastic wrap and twist the ends like a candy.

  • ● Place the no-bake tuna meatloaf in the fridge to rest for at least 2 hours, so it will firm up nicely.

  • ● Prepare the dressing by mixing lemon juice and extra virgin olive oil. Unwrap the cold meatloaf, cut it into slices and arrange them on a plate, pour the previously prepared dressing over it, and here is this delicious no-bake tuna meatloaf ready.

Notes:

The no-bake tuna meatloaf can be stored in the fridge for a couple of days. Instead of cream cheese, you can use well-drained ricotta. If desired, add a garlic clove to the dressing for flavor or a bit of finely chopped parsley. If you don’t want to make the dressing or wish to enrich the meatloaf even more, pair it with some mayonnaise.
