Cold Tiramisu Cakes

The cold tiramisu cakes are clever and super delicious no-bake cold treats, mini single-serving desserts that are prepared in just 5 minutes. I had to prepare super quick sweets for some last-minute friends, I had little in the fridge, some mascarpone, some cookies in the pantry, and I decided to make pastries that literally went like hotcakes. To make the cold tiramisu cakes, you just need to make the coffee a few minutes earlier, just long enough to let it cool down, and they will be ready in no time. You can serve them immediately or store them in the fridge; you’ll make a great impression with very little effort. They are perfect both in summer, with this heat, and in any other period of the year. You can even keep them in the freezer to store them longer and enjoy them as if they were small ice creams/semi-freddos!

Ingredients

  • 17.6 oz mascarpone
  • 1/2 cup sugar
  • 1 oz coffee
  • 14 cookies
  • 1 tsp unsweetened cocoa powder
  • as needed unsweetened cocoa powder

Steps

  • The cold tiramisu cakes are super easy and quick to prepare; first, make the coffee and let it cool down (you can also put it in the fridge or freezer to speed up the process).

  • In a bowl, put the mascarpone, sugar, unsweetened cocoa powder, coffee, and mix with a hand whisk until you obtain a smooth and homogeneous cream, then transfer it into a pastry bag with a star-shaped nozzle (or similar).

  • Take a cookie (I used digestive cookies, my favorite for no-bake cold desserts), fill it with a little cream, cover with another cookie, and add more cream.

  • Make all the cold tiramisu cakes in this way and then decorate them with a dusting of cocoa.

  • The cold tiramisu cakes are ready; you can enjoy them immediately or, better yet, let them rest in the fridge for a while so they soften and set well.

Notes:

The cold tiramisu cakes keep in the fridge for about 3 days; alternatively, you can also freeze them to enjoy them as if they were small ice creams/semi-freddos.
