I wanted to prepare a nice salad for lunch, as I had guests and wanted to make a nutritious and tasty one-dish meal, something simple yet special. So, I decided to make a nice rice salad that everyone always enjoys, adding chopped omelet, tomatoes, cheese, arugula, olives, and I must say it’s one of the best I’ve ever made. The rice salad with omelet is prepared in just a few minutes without using the oven, it’s delicious fresh, still great when cold, perfect for Ferragosto. I’m sure you’ll love it!

Ingredients
- 1 1/2 cups salad rice
- 1 cup cherry tomatoes
- 5.3 oz asiago cheese
- 2 oz arugula
- 2 oz black olives (pitted)
- 3 tbsps extra virgin olive oil
- 1 lemon juice
- to taste basil
- to taste salt
- to taste black pepper
- 1.8 oz grated parmesan cheese
- 0.9 oz pecorino cheese (grated)
- 6 eggs
- 1 sprig parsley
- to taste salt
- to taste black pepper
Steps
The rice salad and omelet is very simple and quick to prepare. First, put the eggs, grated cheeses, chopped parsley, salt, and black pepper in a bowl and mix all the ingredients well using a fork.
Grease a pan with a little olive oil and pour in the omelet mixture, let it cook over low heat for 6-7 minutes, flip it, and continue cooking for about 5 minutes until it is golden.
Cook the rice in salted boiling water and drain it al dente. Add the chopped cherry tomatoes, cubed asiago, pitted black olives, cubed omelet, coarsely chopped arugula, torn basil, salt, black pepper, lemon juice, and extra virgin olive oil, and mix all the ingredients well.
The rice salad and omelet is ready. You can enjoy it right away, but I recommend putting it in the fridge for at least 30 minutes to let the flavors meld.
Notes:
The rice salad and omelet can be kept in the fridge for a couple of days. Instead of asiago, you can use Tuma, primosale, emmental, or similar cheese.
