I had some smoked salmon to use up and created this appetizer, also perfect for a New Year’s Eve dinner or a mid-August lunch, ideal for an aperitif, a party, or a buffet, it is prepared in 10 minutes and will disappear in a flash, it’s a real delight!

Ingredients
- 7 oz smoked salmon
- 7 oz cream cheese
- 2 oz arugula
- 4 slices sandwich bread
- 1 lemon
- to taste mayonnaise
- to taste arugula and lemon for decoration
Steps
The salmon sandwich bread cake with arugula and lemon is very simple and quick to prepare, first put the cream cheese, coarsely chopped arugula, diced smoked salmon, grated lemon zest, and lemon juice in a bowl and mix all the ingredients well.
Take a slice of sandwich bread and spread some of the previously prepared mixture on top. Cover with another slice of sandwich bread, more cream, and continue this way until all ingredients are used up.
Spread a thin layer of mayonnaise on the surface of the salmon sandwich bread cake and decorate as desired. I added some arugula, smoked salmon, and lemon slices.
The salmon sandwich bread cake is ready to enjoy immediately or, better yet, let it rest in the fridge for a while, so it will firm up nicely.
Notes:
The salmon sandwich bread cake can be stored in the fridge for a couple of days. For a richer and more indulgent version, you can cover the block with smoked salmon slices. You can enrich the filling by replacing some of the cream cheese with mayonnaise.
