Sicilian Sausage

The Sicilian sausage with potatoes, cherry tomatoes, and onions is a simple, quick, and delicious Mediterranean recipe, a main dish with a side simple and tasty. This is one of the little recipes I make most often when I want to cook sausage, in just a few minutes and with few and simple ingredients, I bring to the table a unique dish that pleases the whole family. To make this Sicilian sausage, you’ll mess up only one baking tray and you won’t even need to boil the potatoes first; thanks to a trick, the sausage and vegetables won’t dry out but will remain soft and even tastier!

Ingredients

  • 1.5 lbs sausage
  • 12 cherry tomatoes
  • 1/4 cup extra virgin olive oil
  • 3 potatoes (medium)
  • 2 onions
  • 1/4 cup white wine
  • to taste rosemary
  • to taste salt
  • to taste black pepper
  • to taste spices

Steps

  • The Sicilian sausage is very simple and quick to prepare, first peel the potatoes, cut them into chunks and place them in a baking tray, season them with 2 tablespoons of oil and bake them in a preheated oven at 392°F for 20 minutes. 

  • Take the potatoes out of the oven and add the cherry tomatoes cut in half, the onion in pieces, salt, pepper, spices to taste (I used rosemary, oregano, and thyme), and another two tablespoons of oil; give it a good stir.

  • Also add the sausage cut into small pieces, the white wine, and mix everything together, season with some sprigs of rosemary and bake, still at 392°F, for another 25/30 minutes. Halfway through cooking (about fifteen minutes later), remove the rosemary and give it a quick stir, just to ensure even cooking and to avoid burning the herbs.

Tips:

The Sicilian sausage keeps at room temperature for a few hours or in the fridge for a couple of days.
