The peach and amaretti cake is a truly special dessert. I had quite a few fresh peaches to use up, so I made an upside-down cake, also using some crumbled amaretti. What a delight! The peach and amaretti cake is fragrant, creamy, and soft as a cloud, without butter, it melts in your mouth. To make it even more delicious, I decided to add a bit of peach jam on top after taking the cake out of the oven, making this dessert even more indulgent, moist, soft, and shiny. It’s also great served with a scoop of ice cream; I’d recommend vanilla, lemon, or any other fruit flavor you like 😀

Ingredients
- 1 1/2 cups all-purpose flour
- 2/3 cup sugar
- 1/3 cup vegetable oil
- 1/4 cup milk
- 1 3/4 oz amaretti cookies
- 5 peaches
- 3 eggs
- 2 tbsp peach jam (optional)
- 1 packet baking powder
- 1 lemon
- to taste powdered sugar
Steps
● The peach and amaretti cake is very simple and quick to prepare. First, peel the peaches, cut them in half, and remove the pit.
● Beat the eggs with the sugar until they become light and frothy. Add the vegetable oil and mix. Add the milk, flour, baking powder, grated lemon zest, and combine all the ingredients.
● Crumble the amaretti onto the base of a baking pan lined with parchment paper, sprinkle a generous amount of powdered sugar, then arrange the peaches with the pit side down, and add another sprinkle of powdered sugar.
● Pour over the previously prepared batter and bake the peach and amaretti cake in a preheated oven at 350°F for about 40 minutes. Use a toothpick to check if it’s done.
● Flip the peach and amaretti cake onto a wire rack and spread the peach jam over the surface, previously strained and heated in the microwave for a few seconds (this step is optional, but adding the jam will make the dessert not only more moist, soft, and tasty, but also shinier).
Notes:
The peach and amaretti cake keeps well at room temperature for 3-4 days. You can use any type of peaches you prefer. You can also slice the peaches instead of halving them or use canned ones.
