The cheese snacks are corn chips or, rather, cheese sticks, baked in the oven. I don’t know about you, but I love this type of chips, obviously we know they’re not very healthy, so for an aperitif with friends, I prepared these delicious snacks to enjoy with a nice fruit cocktail. Cheese snacks are prepared in less than 10 minutes with only 4 main ingredients, cornmeal, water, oil, and grated cheeses (plus salt, of course) and without potatoes or potato flakes (the mashed potato mix, to understand better), they are crispy outside and soft inside, obviously they won’t have the crunchiness and texture of store-bought cheese croissants, but their taste will win you over, they are too tasty, perfect also as an appetizer, for a party or a buffet, to be tried as soon as possible!

Ingredients
- 7 oz water
- 1 cup cornmeal
- 2 oz grated Parmesan cheese
- 1 oz Pecorino cheese (grated)
- 1 tsp extra virgin olive oil
- to taste salt
Steps
● Cheese snacks are super easy and quick to prepare, first put the cornmeal in a bowl, add the grated Parmesan and Pecorino cheese, the salt, and mix with a fork.
● Add the room temperature water, oil, and blend everything together, still with the fork, the mixture will be homogeneous but quite soft.
● Take a teaspoon of dough, form a ball and then a stick, stretch it on your hand, over your fingers, to get the “perfect” shape.
● Place the cheese snacks on a non-stick baking sheet and bake them in a preheated oven at 392 degrees Fahrenheit for 20-25 minutes, they should brown.
Notes:
Cheese snacks can be stored at room temperature for 2-3 days. Ideally, they should be baked just before serving, like classic chips, if left in the air for too long, they become soggy. If necessary, after cooling them, seal them in an airtight bag. You can also reheat them in the oven for 5 minutes to make them crispy again. You can add other spices to taste such as paprika, pepper, or aromatic herbs to make them even tastier.
