Hard Boiled Egg Salad

The hard boiled egg salad is a no-bake, quick, fresh, and tasty recipe. In the summer, we crave simple and flavorful salads, and this one is truly delicious, creamy, nutritious, and super tasty! The hard boiled egg salad is made with hard boiled eggs, mayonnaise, yogurt, and a little more; it’s delicious on its own and perfect with croutons or bruschetta, perfect as an appetizer, side dish, or main course, try it because it’s truly amazing!

Ingredients

  • 1/2 cup plain yogurt
  • 1/2 cup mayonnaise
  • 6 eggs
  • 1 sprig parsley
  • 1 teaspoon mustard
  • to taste salt
  • to taste black pepper

Steps

  • The hard boiled egg salad is very simple and quick to prepare. First, put the eggs in a small pot with cold water, bring to a boil, and let them cook for 8-9 minutes until they are hard boiled.

  • Drain the eggs, rinse them under cold running water to cool them, and peel them. Then, cut them roughly.

  • In a bowl, mix the mayonnaise, plain unsweetened yogurt, and mustard.

  • Add the chopped parsley, hard boiled eggs, salt, and black pepper, and mix well to combine all the ingredients.

  • The hard boiled egg salad is ready. You can enjoy it immediately or, better yet, let it rest in the fridge for at least 15 minutes to enhance the flavors and slightly chill.

Notes:

The hard boiled egg salad keeps in the fridge for a couple of days. If you don’t want to use yogurt, just mayonnaise works fine. Instead of parsley, you can use chives. You can enrich the hard boiled egg salad with pickles, chopped onion, and/or boiled potatoes.
