Chicken and Zucchini Skewers

The chicken and zucchini skewers are tender and delicious meat rolls, with a golden and crispy breadcrumb coating, without eggs, and a tasty and cheesy filling of cooked ham, zucchini, and cheese. I had some chicken breast slices and didn’t feel like making them breaded as a cutlet or roasted, I wanted to prepare something more indulgent for dinner, so I thought of making these stuffed rolls that were a big hit and even Matilde loved them. The chicken and zucchini skewers are super quick and easy to make, perfect with a side of salad or roasted potatoes, they will solve your dinner problem and you can cook them in a pan, oven, on the grill, or in an air fryer, and they can even be frozen to have them ready to cook anytime!

Ingredients

  • 3.5 oz cooked ham
  • 3.5 oz scamorza cheese
  • 4 slices chicken breast
  • 1 zucchini
  • to taste salt
  • to taste cornmeal
  • to taste extra virgin olive oil

Steps

  • The chicken and zucchini skewers are very simple and quick to prepare, first clean the zucchini, slice it into very thin strips using a vegetable peeler, and salt.

  • Take a slice of chicken breast and salt it, then fill it with some zucchini slices, cooked ham, scamorza cheese, and form a roll, continue this way to make the others.

  • Bread the rolls in cornmeal, skewer them on 3 wooden skewers, and then cut the chicken and zucchini skewers into 3 parts.

  • Pour a drizzle of extra virgin olive oil in a pan, heat it up and cook the chicken and zucchini skewers for about ten minutes on each side over low heat. Alternatively, you can grill the rolls, bake in a preheated oven at 400°F for 20-25 minutes, or in an air fryer at 400°F for 15-18 minutes.

Notes:

The chicken and zucchini skewers can be kept at room temperature for a few hours or in the fridge for a couple of days. You can also make them and keep them in the fridge for a couple of days or prepare and freeze them for up to 3 months.
