Peanut Butter Salami

The peanut butter and chocolate salami is a quick, delicious, and no-bake dessert. I love cookie salami, I have prepared many versions, and I couldn’t miss one with peanut butter, an ingredient I adore and is never missing at my house. The peanut butter salami is fresh and delicious, it can be made in less than 10 minutes, without butter, sugar, and eggs, it can be a gluten-free, lactose-free, and even vegan dessert depending on the cookies, milk, and chocolate you choose. It keeps in the fridge but you can also freeze it to store it for more days, but it’s so good that it will disappear in a flash!

Ingredients

  • 2 cups digestive biscuits
  • 3/4 cup peanut butter
  • 3.5 oz chocolate (milk or dark)
  • 2 tbsp milk
  • to taste unsweetened cocoa powder

Steps

  • The peanut butter salami is super easy and quick to prepare, first, put the digestive biscuits in a bowl and crush them with a pestle, do not crumble them completely, the pieces should remain slightly coarse.

  • Add the milk, peanut butter (if it is not very creamy, heat it for a few seconds in a bain-marie or microwave), melted chocolate (either dark or milk, I used the latter) and mix all the ingredients well.

  • Transfer the mixture onto a sheet of plastic wrap, placed on a piece of aluminum foil, compact it, and shape it into a log, forming a salami and wrap it like candy.

  • Place the peanut butter salami in the fridge to set for at least 2 hours.

  • Unwrap the peanut butter salami, garnish it with a dusting of unsweetened cocoa powder, cut it into slices, and serve.

Notes:

The peanut butter and chocolate salami keeps in the fridge for 3-4 days. Instead of milk, you can use a plant-based beverage or even water; in the latter case, it will keep longer (a week), even outside the fridge (if temperatures allow). Alternatively, you can also freeze it. For an even more indulgent and chocolaty version, use chocolate digestive biscuits. If you want to add peanuts (unsalted), substitute them for 50 g of biscuits.
