Zucchini Puff Pastry Spiral

The zucchini puff pastry spiral is a simple, easy, and quick savory puff pastry pie to prepare. I had a roll of puff pastry and some ricotta about to expire and thought of making a sort of maxi pinwheel, with a creamy filling of ricotta, zucchini, and cooked ham. It disappeared in a flash! The zucchini puff pastry spiral is made with just one roll of puff pastry, you don’t even need to pre-cook the zucchini, it’s crisp, tasty, and delicious, ideal as a main dish, appetizer, for an aperitif, a buffet, excellent freshly baked and very good even cold!

Ingredients

  • 5 oz ricotta
  • 5 oz zucchini
  • 3.5 oz cooked ham
  • 1.8 oz grated Parmesan
  • 1 roll puff pastry
  • 1 egg
  • to taste salt
  • to taste black pepper
  • to taste sesame seeds

Steps

  • The zucchini puff pastry spiral with cooked ham and ricotta is very simple and quick to prepare. First, prepare the filling: in a bowl, put the ricotta (which must be very dry, if not, let it drain a bit before using), the grated zucchini with a coarse grater and well squeezed, the diced cooked ham, the grated Parmesan, salt, black pepper and mix all the ingredients well.

  • Cut the pastry into 4 equal parts, vertically, and fill the edge of each strip, I, for convenience, put the filling in a piping bag.

  • Then roll each piece, obtaining 4 filled rolls. Take one roll and place it on a sheet of parchment paper (use the one from the pastry) to form a spiral. Take a second roll and attach it to the first, following the same shape, proceed in the same way with the other two rolls to make the zucchini puff pastry spiral.

  • Brush the zucchini puff pastry spiral with the beaten egg, cut it into 6 parts (or even 8, if you prefer), without separating it, add the sesame seeds and bake it in a preheated oven at 392°F for about 25 minutes; it should be golden brown.

Notes:

The zucchini puff pastry spiral can be stored at room temperature for a few hours or in the refrigerator for a couple of days. If you do not want to use ricotta, you can replace it with another creamy cheese (spreadable, crescenza, robiola), and instead of cooked ham, speck works well too. For a vegetarian version, omit the cured meat and add an extra 1.8 oz of ricotta and 1.8 oz of zucchini.
