Chicken with cherry tomatoes and olives baked in the oven is a quick and delicious recipe. Every time I cook chicken, I like to prepare it in different ways, but these morsels are so good that I make them often. Chicken with cherry tomatoes and olives is prepared in just a few minutes without eggs, it’s golden, crispy and tender inside, tasty and flavorful, breaded with corn flour to make it even better, with a side of cherry tomatoes and black olives, a perfect main course!

Ingredients

  • 1.5 lbs chicken breast
  • 1.5 cups cherry tomatoes
  • 2.5 oz black olives
  • 2/3 cup corn flour
  • 1/2 cup grated Parmesan cheese
  • as needed spices
  • as needed salt
  • as needed black pepper
  • as needed oregano
  • as needed extra virgin olive oil

Steps

  • Chicken with cherry tomatoes and olives is very simple and quick to prepare. First, cut the chicken breast into small pieces, then place it in a bowl along with halved cherry tomatoes and add salt.

  • Add the grated Parmesan cheese, corn flour, spices to taste (I used rosemary, thyme, oregano, paprika, and garlic powder), black pepper and mix everything well.

  • Transfer the chicken with cherry tomatoes into a baking dish and distribute it evenly. Drizzle extra virgin olive oil on top and bake in a preheated oven at 392°F for 20 minutes.

  • Remove the dish from the oven, add the black olives, give it a quick stir, and bake the chicken with cherry tomatoes and olives for another 5 minutes.

Notes:

Chicken with cherry tomatoes and olives can be kept at room temperature for a few hours or in the fridge for a couple of days. You can also use green olives. If you like, you can add a chopped onion.
