Every time I cook chicken, I like to prepare it in different ways, but these morsels are so good that I make them often. Chicken with cherry tomatoes and olives is prepared in just a few minutes without eggs, it’s golden, crispy and tender inside, tasty and flavorful, breaded with corn flour to make it even better, with a side of cherry tomatoes and black olives, a perfect main course!

Ingredients
- 1.5 lbs chicken breast
- 1.5 cups cherry tomatoes
- 2.5 oz black olives
- 2/3 cup corn flour
- 1/2 cup grated Parmesan cheese
- as needed spices
- as needed salt
- as needed black pepper
- as needed oregano
- as needed extra virgin olive oil
Steps
Chicken with cherry tomatoes and olives is very simple and quick to prepare. First, cut the chicken breast into small pieces, then place it in a bowl along with halved cherry tomatoes and add salt.
Add the grated Parmesan cheese, corn flour, spices to taste (I used rosemary, thyme, oregano, paprika, and garlic powder), black pepper and mix everything well.
Transfer the chicken with cherry tomatoes into a baking dish and distribute it evenly. Drizzle extra virgin olive oil on top and bake in a preheated oven at 392°F for 20 minutes.
Remove the dish from the oven, add the black olives, give it a quick stir, and bake the chicken with cherry tomatoes and olives for another 5 minutes.
Notes:
Chicken with cherry tomatoes and olives can be kept at room temperature for a few hours or in the fridge for a couple of days. You can also use green olives. If you like, you can add a chopped onion.
