Muffin Tarts

The muffin tarts are water-based sweets, without eggs, milk, and butter that you can fill as you like. I wanted to make sweet muffins, I didn’t have any more eggs at home, so I used my water-based pastry recipe, slightly modifying it, to prepare these soft cakes with a creamy filling. They were a hit! The muffin tarts melt in your mouth, the dough is prepared in no time, and for the filling, you can use whatever you prefer, jam (preserve), Nutella, pistachio cream, custard, or other spreads, they are perfect for breakfast, a snack, or dessert, you’ll love them!

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup sugar
  • 1/3 cup water
  • 3 1/2 tbsp vegetable oil
  • 1 tsp baking powder
  • 1 lemon zest (grated)
  • 1 pinch salt
  • to taste jam, Nutella, pistachio cream, or other (for the filling)
  • to taste powdered sugar

Steps

  • The muffin tarts are very simple and quick to prepare, first put the flour, sugar, baking powder, and a pinch of salt in a bowl and mix with a fork.

  • Add the vegetable oil, water, the grated zest of one lemon, and form a soft and compact dough, divide it into 12 equally weighted pieces (about 1.5 oz each) and make balls.

  • Place the dough in muffin cups and press it with the bottom of a floured glass (just so it doesn’t stick), to create small baskets.

  • Fill the muffin tarts with the filling you prefer, I used apricot and strawberry jam (preserve), Nutella, and pistachio spread.

  • Bake the muffin tarts in a preheated oven at 350 degrees Fahrenheit for about 25 minutes, at the end of cooking, gently unmold them and garnish with a sprinkle of powdered sugar.

Notes:

The muffin tarts keep at room temperature for 3-4 days. You can fill the sweets with the ingredients you prefer, in addition to jam, Nutella, pistachio cream, or other spreads, you can use custard, ricotta cream, peanut butter, or other creams to your liking.
