I had some yogurt and cooked ham to use up, so I thought of preparing some warm buffet food, a quick and super tasty variation of the Sicilian bakery, making a soft dough fragrant with yogurt, without leavening. I made calzones with cooked ham, rolls with sausages, and mini pizzas with tomato and mozzarella, perfect for a tasty dinner, a birthday, a party, an appetizer, or a buffet. Ingredients
- 4 cups all-purpose flour
- 1.7 cups plain yogurt
- 2 tsp salt
- 1 tbsp extra virgin olive oil
- 1 packet instant yeast for savory preparations
- 1 cup tomato pulp
- 7 oz scamorza cheese
- 1.7 oz cooked ham
- 5 sausages
- to taste salt
- to taste black pepper
- to taste oregano
- to taste extra virgin olive oil
Steps
Yogurt savory pastries are very simple and quick to prepare. First, put the flour, plain unsweetened yogurt, salt, instant yeast, and extra virgin olive oil in a bowl and form a soft and homogeneous dough, then divide it into 15 pieces of the same weight.
Now make the yogurt savory pastries. If you want to prepare the rolls with sausages, take a piece of dough and stretch it to form a rope, then wrap it around the sausage.
If you want to prepare the calzones (or panzerotti) with ham, roll out a piece of dough to form a disc about 0.2 inches thick, fill it with cooked ham and cheese, and fold it into a half-moon shape.
To make the mini pizzas, roll out a piece to form a circle about 0.4 inches thick and place it on a baking sheet.
Brush all the yogurt savory pastries with a little milk, top the mini pizzas with some tomato pulp seasoned with oil, salt, pepper, and oregano, and some diced scamorza cheese. Sprinkle some sesame seeds on the rolls and bake in a preheated oven at 392°F for about 20 minutes until golden.
Tips:
The yogurt savory pastries can be kept at room temperature for a few hours or in the fridge for 2-3 days. You can shape and fill the pastries as you like. With these quantities, you will make medium-sized pieces, but you can make them larger or in a mini version if you prefer. If you like, you can add the cheese to the mini pizzas a couple of minutes before the end of baking.
