The zucchini puff pastry rolls are easy, super quick, and delicious savory snacks. I made this recipe for an appetizer with friends, and they disappeared fast! In less than 10 minutes and with just a few simple ingredients, you’ll make delicious snacks (and HERE you’ll find tons more), crispy and with a creamy and stringy filling! The zucchini puff pastry rolls are perfect for a party, a buffet, a cocktail dinner, or as an appetizer, great hot and delicious cold, make plenty because they go fast 😀

Ingredients

  • 2.5 oz cream cheese
  • 1.75 oz scamorza cheese
  • 1 zucchini
  • 1 sheet puff pastry (rectangular)
  • 1 egg
  • to taste salt

Steps

  • The zucchini puff pastry rolls are super easy and quick to prepare. First, clean the zucchini and slice it very thinly using a mandoline (you can cut it with a knife if you prefer) and salt them.

  • Unroll the puff pastry sheet and cut it into 3 equal parts vertically.

  • Spread some cream cheese along the edge of each pastry strip, add a few zucchini slices (I used 4), the grated scamorza cheese, more zucchini slices (again 4 slices), and roll each strip to form long baguettes, placing the seam side down.

  • Brush the tops of the rolls with the beaten egg and cut them into pieces about 3/4 inch (2 cm) wide.

  • Place the zucchini puff pastry rolls on a baking sheet and bake in a preheated oven at 392°F (200°C) for about 20 minutes.

Notes:

The zucchini puff pastry rolls can be kept at room temperature for a few hours or in the fridge for a couple of days. You can replace the cream cheese with another creamy cheese of your choice (robiola, ricotta, gorgonzola) and the scamorza cheese with other melting cheeses (well-drained mozzarella, provola). I made them in a vegetarian version, but if you want, you can replace the second layer of zucchini with cooked ham or speck.
