The curry stew is a delicious and easy-to-make meat dish with a spicy flavor. I had some chicken breast to cook but didn’t feel like making the usual grilled slice or cutlet, so I thought of cooking it in a pot with some vegetables and adding the curry, a spice I really like. To say that it was a hit is an understatement, Matilde loved it too! Very tender with a very creamy sauce thanks also to the addition of a secret ingredient, which will make it special, this curry stew is a recipe you must try as soon as possible, it’s perfect to serve on its own with some slices of bread (a must for dipping :D) and a salad, or with al dente cooked rice, basmati is perfect!

Ingredients
- 1.75 lbs chicken breast
- 1.75 cups water (or broth)
- 2/3 cup plain yogurt (unsweetened)
- 2 carrots
- 2 onions
- 2 tbsp flour
- 1 stalk celery
- 1 clove garlic
- 1 tbsp curry
- 1 tsp paprika
- Half glass white wine
- to taste salt
- to taste black pepper
- to taste thyme
Steps
The curry stew is very simple and quick to prepare. First, cut the chicken breast into large pieces. In a large bowl, mix flour, paprika, thyme, black pepper, and curry.
Add the chicken pieces and coat them evenly with the flour mixture. Finely chop celery, carrots, onions, and garlic, and place them in a pan. Add the oil and sauté for a few minutes, then add the chicken and let it brown until the meat turns white.
Salt and deglaze with white wine, let it flavor for a couple of minutes, and then add the water (or vegetable broth). Cover with a lid and let the curry stew cook for 35 minutes, stirring occasionally.
Once cooked, add the unsweetened plain yogurt and adjust the salt and pepper if necessary.
Tips:
The curry stew can be stored in the fridge for a couple of days. Instead of chicken breast, you can also use turkey or pork. If you choose veal, you will need to cook it longer, at least an hour and a half. You can add spices to taste.
