I wanted to prepare a lovely, light and fragrant cake for breakfast, so I combined 3 ingredients I adore in desserts and made this delight. What a wonder! The orange, carrot, and almond cake is soft and very tender, moist and spongy, without butter, prepared in 5 minutes by putting all the ingredients in a food processor (or blender), perfect for a snack or afternoon tea. My daughter loved it, it melts in your mouth!

Ingredients
- 1 3/4 cups all-purpose flour
- 6 oz oranges
- 3/4 cup sugar
- 4 1/2 oz carrots
- 1/2 cup vegetable oil
- 2/3 cup almonds
- 3 eggs
- 1 orange zest
- 1 packet baking powder
- to taste almond flavoring
- to taste powdered sugar
Steps
The orange, carrot, and almond cake is very simple and quick to prepare. First, place the peeled almonds, peeled and chopped carrots, grated zest of an orange, and orange segments, seeds removed, into a food processor.
Quickly blend all the ingredients, add the sugar, eggs, and almond flavoring, and blend again. Incorporate the vegetable oil, flour, baking powder, and blend one last time until you obtain a smooth mixture.
Transfer the mixture to a baking pan lined with parchment paper and bake the orange, carrot, and almond cake in a preheated oven at 350°F for about 40 minutes. Use a toothpick to check if it is done.
Finish the orange, carrot, and almond cake with a dusting of powdered sugar.
Tips:
The orange, carrot, and almond cake keeps at room temperature for 4-5 days. You can also use a blender. If you have a small food processor, chop only the ingredients from the first step and place them in a bowl, add the others, following the procedure above, mixing with a fork.
