The baked vegetable roll is a sort of vegetarian meatloaf with mixed grated vegetables and a cheese filling. I had quite a bit of fresh vegetables and decided to prepare this vegetable roll for dinner, using carrots, zucchini, and potatoes. It was a hit, and you won’t even need to blanch the vegetables because you’ll use them raw! The vegetable roll is soft and flavorful, I didn’t add cooked ham, speck, or other cold cuts to make a vegetarian version, but if you want, you can also add them, children will love it too, it’s a perfect recipe to make them eat vegetables with taste!

Ingredients
- 7 oz potatoes
- 5 oz zucchini
- 5 oz carrots
- 5 oz scamorza cheese
- 1.75 oz Parmesan cheese
- 2 eggs
- to taste extra virgin olive oil
- to taste salt
- to taste black pepper
Steps
The vegetable roll is very simple and quick to prepare, first clean the vegetables, peel the potatoes and carrots, grate them with a coarse grater (the one you use to grate flaked cheese) and squeeze them well, they should lose their vegetable liquid and remain dry.
Put the grated vegetables in a bowl, add salt, black pepper, grated Parmesan, eggs, and mix all the ingredients well.
Transfer the mixture onto a sheet of parchment paper and form a rectangle about half an inch thick, fill it with diced scamorza cheese (I used smoked one) and form a roll, close it like a candy.
Bake the vegetable roll in a preheated oven at 392°F for 20 minutes. After the time, unwrap the roll, add a drizzle of extra virgin olive oil on top, and bake the roll for another 10-15 minutes, it should be nicely browned.
Notes:
The baked vegetable roll can be stored at room temperature for a few hours or in the fridge for 2-3 days. If you prefer, you can also enrich the filling by adding cooked ham, speck, or other to taste. You can also use only two types of vegetables or vary the quantities, the important thing is that the total weight is always 500g. Make sure they are well-dried.
