The yogurt mini pizzas are a quick, clever, tasty, and yeast-free recipe to prepare in just a few minutes with a few simple ingredients. I didn’t know what to prepare for dinner, I had a couple of yogurts to use up, and I thought of making small pizzas with yogurt in the dough. So good! The yogurt mini pizzas are soft, delicious, and cheesy. You can knead and bake them immediately because they don’t need to rise. You can top them with the ingredients you prefer, and they will save your dinner. They are also perfect for an appetizer, a buffet, or a party!

Ingredients
- 2 cups all-purpose flour
- 3/4 cup plain natural yogurt (unsweetened)
- 1 tbsp extra virgin olive oil
- Half packet instant yeast for savory preparations
- 1 tsp salt (leveled)
- 1 cup tomato sauce
- 5.3 oz scamorza cheese
- to taste salt
- to taste black pepper
- to taste oregano
- to taste extra virgin olive oil
Steps
Yogurt mini pizzas are very simple and quick to prepare. First, place the flour, whole unsweetened yogurt, extra virgin olive oil, yeast, and salt in a bowl and mix everything, forming a soft and compact dough.
Divide the dough into 4 equal parts and roll out each piece to form a circle about 1/4 inch thick. Place the yogurt mini pizzas on a baking sheet lined with parchment paper, brush them with a little oil, and bake in a preheated oven at 356°F for 15 minutes.
Meanwhile, season the tomato sauce with oil, salt, black pepper, and oregano and grate the scamorza cheese (or cut it into pieces if you prefer).
Remove the pizzas from the oven, top them with the tomato sauce and cheese, and bake for another 5 minutes, just enough time to flavor and melt the cheese.
Notes:
The yogurt mini pizzas can be stored at room temperature for a few hours or in the fridge for a couple of days. For this recipe, you can also use Greek yogurt in the same quantities. Instead of instant yeast, you can use a pinch of baking soda. You can top the yogurt mini pizzas with the ingredients you prefer. You can also cook them in an air fryer at 356°F for 15 minutes.
